Protein Pumpkin Bread Cookies

Ingredients:
1 cup almond flour
1 cup oat flour (I just use regular oats and grind them in the magic bullet)
2 packets of stevia
1/3 cup coconut sugar
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/4 tsp clove
1/4 tsp nutmeg
1/4 cup pure maple syrup
1 - 15 oz can pumpkin
2 scoops of vanilla protein powder (this is the one I use LINK)
2 eggs
1 tsp vanilla
Instructions: Combine all the dry ingredients (flours, stevia, spices, baking soda, salt, protein powder) in a bowl and whisk together. Combine the wet ingredients (eggs, vanilla, maple syrup, pumpkin, applesauce, coconut sugar) in a mixer. Mix until the coconut sugar has dissolved. Combine the dry ingredients with the wet and mix until completely incorporated.
NOW preheat the oven to 350 degrees. When cooking with almond flour it's important to let the mixture rest to absorb fully.
You can either make these into cookies or a traditional loaf. The cookies only need 13-16 minutes to bake (depending on your oven). The loaf will take around 45-50 minutes. Just insert a toothpick to make sure the center is done.
