Summer is a great time to assess how many plants you consume in a week since there are so many fruits and vegetables in season. According to Dr Mary Claire Haver, one of the best ways to combat insulin resistance and visceral fat accumulation in midlife is to eat plenty of fiber, at least 25 grams a day. Most Americans get around 10-12 per day.
Another reason to eat a wide range of plants is to diversify your microbiome, also known as the "second brain." All plants offer different vitamins and minerals so eating a wide variety will keep your microbiome diverse, creating better health and well-being.
You've probably seen the health challenges of getting 30 plant points per week. Basically, write down every fruit, vegetable, nut, seed, legume, and herb you eat in a week but it only counts once. So if you eat an apple every day, that's still only 1 point. The goal is to get to 30 different plants in a week. Who's up for the challenge?
